Here's a delicious rice pudding that comes together in just 35 minutes and requires very little prep and just one pot. Rice puddings don't have to contain cream to be creamy. With its high starch content, arborio rice gives this hearty pudding an incredibly rich and smooth texture. This recipe also features skim milk, sugar, ground cinnamon, and golden raisins. All you have to do is mix all the ingredients together in a large saucepan (just be sure to add the raisins after 15 minutes of cook time) and let them cook for about 30 minutes.   1. In large, heavy nonstick saucepan, combine the milk, rice, sugar and cinnamon; bring to a boil, stirring constantly, until thick and creamy and the rice is very soft, up to 30 minutes; add the raisins after 15 minutes. If the milk starts to evaporate too much during the cooking, add a little water. Cool, stirring as needed.
