Apple Pie Filling

Spoon this filling into your favorite premade pie crust or mini dessert cups. Or swirl some into hot oatmeal for a delicious morning treat.
fresh apple(s)3 medium, Fuji preferred, peeled, cut into 1/4-inch cubes
packed light brown sugar2 Tbsp
fresh lemon juice1 Tbsp, or to taste
lemon zest¼ tsp
ground cinnamon1 tsp
ground nutmeg1 pinch, or to taste
apricot jam2 Tbsp, or jelly
- In a non-reactive bowl, combine apples, sugar, lemon juice, lemon zest, cinnamon and nutmeg.
- Heat a large non-stick skillet over medium heat. Add apple mixture; cook until slightly softened, stirring occasionally, about 12 minutes. Remove from heat and stir in jelly. Serve hot or slightly cooled. Yields about 3 1/3 tablespoons per serving.
