Inspired by the deliciously simple, ridiculously satisfying salad of shredded carrots, parsley, lemon, and olive oil I love to snack on in Paris cafes!
Ingredients
Shallot
½ item(s), minced
Fresh lemon juice
2 Tbsp
Orange juice
2 Tbsp
Dijon mustard
½ tsp
Olive oil
¼ cup(s)
Capers
½ Tbsp, plus a splash of caper brine
Sea salt
1 pinch(es), or to taste
Black pepper
1 pinch(es), freshly cracked, or to taste
Shredded carrots
4 cup(s)
Uncooked beets
4 medium, red variety, scrubbed, thinly sliced or grated
Radishes
16 small, thinly sliced
Fresh mint leaves
¼ cup(s), thinly sliced
Fresh parsley
1 cup(s), leaves pulled and tender stems minced
Unsalted hemp seeds (hemp hearts)
4 Tbsp
Everything bagel seasoning blend

Instructions

In a small bowl, make your vinaigrette by whisking together the shallots through the black pepper – or shaking together in an empty capped jam jar – to emulsify. Set aside until ready to use. Can be stored in the refrigerator up to 1 week.

To a salad bowl, add carrots, beets, and radishes. sprinkle with herbs, hemp hearts, and everything bagel seasoning. Dress with vinaigrette, toss, and enjoy!
