Shrimp Fried Rice

Heat oil in a nonstick skillet over medium-high heat; add rice and cook until heated through. Add vegetables and shrimp; toss and heat through. Push rice-vegetable mixture to side of pan and crack egg in middle; cook egg until is scrambled. Stir egg into rice and season with salt and pepper; garnish with scallions.
