Couscous with Lentils & Vegetables
jarred minced garlic
⅛ tsp, or to taste
10 medium, red and/or yellow, chopped
5 medium, quartered
½ small, thinly sliced
cooked whole wheat couscous
Heat oil in a medium nonstick skillet over medium-high heat; add garlic and cook, stirring, until lightly browned. Add tomatoes, mushrooms and onion; sauté until tender. Add couscous and lentils to skillet; season to taste and heat through.
