Ingredients
Brown Rice, dry
240 g
Calorie controlled cooking spray

Turkey breast, skinless, raw
4 fillet(s)
Thyme, Fresh
1 sprig(s)
Parmesan Cheese
4 tablespoon(s), grated
Medium fat soft cheese
4 tablespoon(s)
Garlic
2 clove(s)
Sun Dried Tomatoes
20 g
Spinach

Preheat the oven to 190°C, 170°C fan, Gas mark 5. Cook the rice to pack instructions, then drain.

Meanwhile heat a pan & mist with cooking spray. Add turkey fillets & cook on both sides for 3 mins, or until golden. Transfer to a baking tray & cook for 20 -25 mins until juices no longer run pink.

In the same pan, make the sauce by adding the garlic & sun-dried tomatoes, season & cook for 5 mins until soft, then stir in the spinach and let wilt. Deglaze with 400ml water then add in the Parmesan & soft cheese, season to taste.

Remove the turkey from the oven & slice. Divide the rice between four bowls, top with the sliced turkey. Spoon over the sauce, then serve garnished with thyme.
