Tuna & watercress salad

Make the most of tinned tuna in this simple, speedy dish.


Ingredients
Sesame Seeds

Peas, fresh or frozen
200 g, frozen
Avocado
1 medium
0% fat natural Greek yogurt
4 tablespoon(s)
Lime Juice, Fresh
2 tablespoon(s)
Coriander, fresh
2 tablespoon(s), finely chopped
Garlic
1 clove(s), crushed
Tuna in spring water, drained
1 can(s), large, drained
Watercress
80 g
Pea shoots
50 g

Toast the sesame seeds in a dry frying pan set over a medium heat for 2-3 minutes, until fragrant and golden, then transfer to a bowl and set aside. Blanch the frozen peas in a pan of boiling water for 3-5 minutes, then drain and refresh under cold running water.

To make a dressing, mash the avocado flesh in a small bowl, then mix in the yogurt, lime juice, coriander and garlic, then season to taste. Loosen with a little water if it seems too thick.

Drain the tin of tuna and put onto a serving platter with the peas, watercress and pea shoots. Spoon over the avocado dressing and scatter over the toasted sesame seeds to serve.
