Tuna, red onion & mixed bean salad

Ingredients
Green Beans
150 g, chopped
Onion
1 small, finely chopped
Lemon Juice, Fresh
2 tablespoon(s), or vinegar
Tomato Purèe
2 teaspoon(s), level
Pickled gherkins, no added sugar
40 g, drained, finely chopped
Capers, in Brine
1 tablespoon(s), drained
Mixed Beans, cooked
240 g, (a 410g can, drained)
Cherry Tomatoes
12 individual, halved
Tuna in spring water, drained
120 g, (a 180g can, drained)
Salad leaves
2 serving(s), mixed leaves
Instructions

Cook the beans in boiling water for 4–5 mins or until just tender.

Meanwhile, put the onion into a bowl with the lemon juice or vinegar, stir well and leave to marinate for 5 mins. Add the tomato purée, gherkins and capers.

Drain the green beans and tip them into the bowl while warm, then add the mixed beans and cherry tomatoes, mixing together thoroughly.

Flake the tuna and add to the bean mixture, stirring it in gently to avoid breaking up the chunks too much. Transfer to two plates and sprinkle with black pepper. Serve with the mixed salad leaves and lemon wedges.
