Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Mist a baking tray with cooking spray and add all the vegetables, except the tomatoes. Mist the veg with cooking spray and roast for 15 minutes.
  2. Add the tomatoes and cook for a further 5-10 minutes, until all the veg is tender and beginning to caramelise.
  3. Arrange the wraps on baking sheets. Mix together the tomato purée and oregano, then spread over the wraps. Top with the vegetables and olives, then scatter over the cheese.
  4. Bake for 7-9 minutes until the cheese has melted and the bases are crisp. Top with a few basil leaves and a handful of rocket to serve.
