2 medium, de-seeded and sliced
1 small, cut into 12 wedges
2 medium, cut into 5mm slices

WW Reduced Fat Grated Mature Cheese
- Preheat the oven to 200°C, fan 180°C, gas mark 6. Mist a baking tray with cooking spray and add all the vegetables, except the tomatoes. Mist the veg with cooking spray and roast for 15 minutes.
- Add the tomatoes and cook for a further 5-10 minutes, until all the veg is tender and beginning to caramelise.
- Arrange the wraps on baking sheets. Mix together the tomato purée and oregano, then spread over the wraps. Top with the vegetables and olives, then scatter over the cheese.
- Bake for 7-9 minutes until the cheese has melted and the bases are crisp. Top with a few basil leaves and a handful of rocket to serve.
