The great thing about summer is the sweetness and affordability of berries. This dessert is easy, but special enough to serve at a dinner party – just double (or triple!) the ingredients to match the number of people you’re serving



100 g, plus a handful of any other berries you like

Icing Sugar

¼ teaspoons, level

Lemon Juice, Fresh

½ teaspoons

Meringue Nests

1 individual

0% fat natural Greek yogurt

200 g


  1. In a mini food processor, whizz the 100g raspberries with the icing sugar and lemon juice, then press the mixture through a sieve. Gently stir this through the yogurt to create a ripple effect.
  2. Quarter the strawberries and put in a bowl with the extra raspberries and the blueberries, reserving a few to decorate. Break the meringue into small pieces.
  3. Assemble the dessert in a serving glass, layering the yogurt mixture, then fruit, then meringue. Decorate with the reserved berries and serve immediately.
