You can't beat classic steak Diane to really hit the spot. Our creamy mushroom sauce is laced with brandy and cream.

Ingredients

Half Fat Butter

2 teaspoon(s)

Onion

1 medium, halved, thinly sliced

Garlic

2 clove(s), crushed

Mushrooms

100 g, halved, thinly sliced

Beef fillet steak, lean, raw

480 g, (4 fillets)

Worcestershire Sauce

1 tablespoon(s)

Brandy

2 tablespoon(s)

Single Cream

125 ml

Green Beans

400 g, steamed

Instructions

  1. Place a large non-stick frying pan over medium heat. Add butter and allow to foam. Add onions, garlic and mushrooms and cook stirring for 3 minutes to brown. Cover with a fitted lid and cook for a further 5 minutes, or until onions are tender and golden. Transfer to a bowl and set aside.
  2. Re-heat same frying pan over medium-high heat. Add steaks and cook for 3 minutes each side for medium rare, or until cooked to your liking. Transfer to a plate and cover loosely with foil. Set aside for 5 minutes to rest.
  3. Re-heat same frying pan back over medium heat. Add cooked onion mixture, Worcestershire sauce and brandy. Cook, stirring until reduced. Add cream and bring to the boil. Cook for a further 1 minute, or until sauce thickens. Season to taste with salt and pepper.
  4. Serve steaks with sauce and cooked green beans.

Notes

Remove steaks from fridge 30 minutes prior to cooking for best results.
