Half Fat Butter
1 medium, halved, thinly sliced
2 clove(s), crushed
100 g, halved, thinly sliced
Beef fillet steak, lean, raw
480 g, (4 fillets)
400 g, steamed
- Place a large non-stick frying pan over medium heat. Add butter and allow to foam. Add onions, garlic and mushrooms and cook stirring for 3 minutes to brown. Cover with a fitted lid and cook for a further 5 minutes, or until onions are tender and golden. Transfer to a bowl and set aside.
- Re-heat same frying pan over medium-high heat. Add steaks and cook for 3 minutes each side for medium rare, or until cooked to your liking. Transfer to a plate and cover loosely with foil. Set aside for 5 minutes to rest.
- Re-heat same frying pan back over medium heat. Add cooked onion mixture, Worcestershire sauce and brandy. Cook, stirring until reduced. Add cream and bring to the boil. Cook for a further 1 minute, or until sauce thickens. Season to taste with salt and pepper.
- Serve steaks with sauce and cooked green beans.
