Aubergine

2 medium, cut into thick slices

Cabbage

170 g, shredded red

Carrots, raw

1 medium, shredded

Chives, Fresh

1 tablespoon(s), chopped

Lime

½ medium, juice, plus wedges

Wholemeal tortilla wrap

Reduced Fat Houmous

160 g

Sriracha sauce

15 ml

0% fat natural Greek yogurt

160 g

Coriander, fresh

1 tablespoon(s), sprigs

Instructions

  1. Preheat a griddle pan or barbecue over a medium-high heat. Lightly mist the aubergine slices with cooking spray, then cook for 2 minutes on each side or until tender and lightly charred. Set aside.
  2. Meanwhile, to make a slaw, combine the cabbage, carrot, chives and lime juice in a large bowl.
  3. Warm the wraps on the grill for 1 minute each side. Spread the wraps with houmous and top with aubergine and the slaw mixture. Drizzle with sriracha and yogurt, sprinkle with coriander and roll to enclose the filling. Serve with lime wedges.
