Pile a generous, tasty topping on slices of toast for lunch at home - or add another slice of bread and turn it into an easy-to-pack traditional sandwich.

Ingredients

Calorie Controlled Brown Bread

Low Fat Soft Cheese

40 g

Reduced Fat Mayonnaise

15 g

Pickled gherkins, no added sugar

Lettuce

3 leaf/leaves, small

Tomato

Roast chicken, light meat, skinless

Avocado

Lemon Juice, Fresh

Chives, Fresh

Instructions

  1. Lightly toast the bread. While it is toasting, mix together the soft cheese and mayonnaise. Chop the gherkins and add them to the mixture. Spread over the slices of toast. Put the toast on 4 plates.
  2. Shred the lettuce leaves and slice the beef tomato, and arrange them on the toast with the chicken. Peel and stone the avocado and slice it thinly; then share it between the portions and squeeze over the lemon or lime juice.
  3. Season the open sandwiches; then snip the chives over them using scissors. Serve at once.
