  1. Preheat the oven to 200°C, fan 180°C, gas mark 6. Put the onions, peppers, sweet potatoes and garlic into a shallow roasting tin.
  2. Put the sausages on top of the vegetables and mist with cooking spray. Add the paprika, black pepper and mustard, then toss together to combine. Spread the sausages and vegetables out into an even layer.
  3. Cook for 30 minutes, then add the tomatoes to the tin and cook for a further 15 minutes or until the sweet potatoes are tender. Dollop over the soured cream, then serve.
