Roasted broccoli & soba noodle salad

This colourful Asian-style salad is so much healthier than a takeaway, but tastes just as good.


Ingredients
Broccoli, raw
600 g
Calorie controlled cooking spray
4 spray(s)
Soba noodles, dry
200 g, prepared as instructed
Lime Juice, Fresh
40 ml
Soy Sauce
2 tablespoon(s)
Sesame Oil
1 tablespoon(s)
Chilli, green or red
1 individual, deseeded and finely chopped
Coriander, fresh
1 tablespoon(s)
Spring Onions
3 medium

Preheat the oven to 200°C, fan 180°C, gas mark 6. Spread the broccoli out on a baking sheet and mist with cooking spray. Roast for 20 minutes, turning halfway through, until golden and just softened, then set aside to cool.

Meanwhile, cook the soba noodles to pack instructions until just cooked, then drain and run under cold water.

Mix together the lime juice, soy sauce, sesame oil and chilli. Put the noodles and broccoli in a bowl and toss with the dressing, coriander and spring onions, then serve.
