Tesco Mediterranean Chargrilled Vegetables (Frozen)

500 g

Tinned Tomatoes

1 can(s), large, cherry

Oregano, Dried

2 teaspoon(s), level

Vinegar, All Types

1 teaspoon(s), red wine

Basil, fresh

2 tablespoon(s)

Ready rolled light puff pastry sheet

375 g

Light feta cheese

Instructions

  1. Mist a large nonstick frying pan with cooking spray and fry the Mediterranean vegetables from frozen over a medium heat for 8-10 minutes until softened.
  2. Stir in the tomatoes and oregano, then reduce the heat to low and cook for 10 minutes, until the vegetables are tender and the sauce has thickened. Stir in the vinegar and torn basil, then season to taste. Set aside to cool.
  3. Preheat the oven to 200°C, fan 180°C, gas mark 6. Unroll the pastry, transfer to a large baking sheet lined with baking paper and score a 3cm border around the edge. Prick the pastry all over with a fork, then spoon over the ratatouille mixture. Crumble over the feta and bake for 18-20 minutes, until the pastry is puffed and golden.
  4. Slide onto a serving board, scatter over the extra basil leaves and cut into 8 equal slices to serve.

Notes

Serve with a mixed green salad on the side.
