King Prawns, Raw
- Put the avocado, chilli flakes and lime juice in a small bowl and mash with a fork to combine. Season to taste.
- Top half the baguette with the lettuce, mint, ribboned cucumber, peeled prawns, coriander and the avocado mixture. Season with ground black pepper then top with the other baguette half. Cut into quarters to serve.
Replace the avocado mixture with 6 tbsp shop-bought tzatziki, if you like.
