Ingredients

Calorie controlled cooking spray

5 spray(s)

Garlic

2 clove(s), minced

Tarragon, Dried

½ teaspoon(s), level, dried

Tinned Tomatoes

400 g, chopped

Tomato Purèe

225 g

Vodka

60 ml

Cornflour

1 tablespoon(s), level

Skimmed Milk

120 ml

Basil, fresh

30 g, chopped

White pasta, dry

225 g, preferably fusilli, cooked and kept hot

Instructions

  1. Spray low fat cooking spray in a large frying pan over medium-high heat. Add garlic and sauté 1 minute. Add tarragon and stir to coat. Add chopped tomatoes, tomato puree and vodka; simmer 10 minutes.
  2. Dissolve cornflour in milk and whisk until blended. Add mixture to frying pan and simmer 1 minute, until sauce thickens. Remove from heat and stir in basil.
  3. Transfer pasta to four individual shallow bowls. Pour vodka sauce over top and serve hot.
