Think paella is reserved for feeding a crowd? Wrong! This simple one-pot recipe proves you can enjoy the taste of Spain whenever you fancy.

Ingredients

Olive Oil

1 teaspoon(s)

Onion

1 large, finely chopped

Garlic

1 clove(s), crushed

Chicken breast, skinless, raw

150 g, cut into small chunks

Paprika

1 teaspoon(s), level, smoked

Cayenne Pepper

¼ teaspoon(s), level

Tomato Purèe

½ tablespoon(s), level

Tomato

1 large, diced

Paella rice, uncooked

60 g, uncooked

Chicken stock cube(s)

½ cube(s), to make 200ml stock

King Prawns, Raw

60 g, peeled and deveined

Parsley, fresh

5 g, roughly chopped, to serve

Lemon

½ medium, cut into wedges, to serve

Instructions

  1. Heat the olive oil in a wide bottomed saucepan, and sweat the onion and garlic for 5 minutes, until softened, remove from the pan then add the chicken, increase the heat slightly and cook until browned, 2 minutes.
  2. Return the onion to the pan and add the paprika, cayenne and tomato puree to the pan and cook, constantly stirring, for 2 minutes. Next, add the tomato, rice and ¾ of the stock. Bring to the boil, and bubble for 4 minutes. Reduce the heat to a simmer and cook for 10 minutes, stirring occasionally. If the rice looks dry, add a splash more of the stock. Add the prawns and cook for a final 5 minutes. Taste and check for seasoning.
  3. Remove from the heat and serve immediately with the parsley and lemon wedges.
