Lunchbox chicken curry pasta

Transport your lunch wherever you are with this delicous low pasta dish.
Ingredients
  • Fat Free Natural Yogurt
    200 g
  • Curry Powder
    1 teaspoons, medium
  • White pasta, cooked
    300 g, such as spirals or bows
  • Calorie controlled cooking spray
    5 spray(s)
  • Chicken breast, skinless, raw
    250 g, chopped
  • Peppers, All Types
    1 medium, deseeded and chopped
  • Cucumber
    1 portion(s), medium, finely chopped
  • Spring Onions
    4 medium, finely sliced
  • Salt
    1 pinch
  • Black pepper
    ⅛ teaspoons, freshly ground
Instructions
  1. Put the yogurt into a bowl and stir in the curry powder.
  2. Cook the chicken breast in a frying pan with the low fat cooking spray.
  3. Add the pasta, chicken, pepper, cucumber and spring onions to the bowl. Season to taste with salt and pepper.
  4. Pack a portion in your lunch box; though remember to keep it in a cool place, such as in the fridge or in an insulated lunchbox with an ice pack.
Notes
Add a little chopped fresh coriander or parsley to the pasta mix, if you like. Remember, this recipe is perfect for picnics and buffets too. Wait for the chicken to cool, before placing in the fridge.
