Ingredients

Sweet potato, raw

100 g

Calorie controlled cooking spray

4 spray(s)

Egg, whole, raw

2 medium, raw

Salad leaves

1 portion(s)

Tomato

2 small, sliced

Cucumber

1 portion(s), medium, sliced

0% fat natural Greek yogurt

1 tablespoon(s)

Fat Free Salad Dressing

1 tablespoon(s), herby dressing

Instructions

  1. Preheat the oven to 200°C, fan 180°C, gas mark 6.
  2. Cut the sweet potato into 8 wedges lengthwise and place on a nonstick baking tray. Spray with cooking spray and season with salt and pepper. Roast in the oven for 30 minutes or until golden brown and tender.
  3. Mist a large frying pan with cooking spray and fry the eggs for 3-4 minutes until the whites are crisp and the yolks still runny (or as desired).
  4. Serve the eggs with the wedges and a salad of mixed greens, tomato and cucumber drizzled with yogurt mixed with the herb sauce. Season to taste and serve immediately.

Notes

Roast the potatoes for this meal ahead of time so they'll reheat quickly while you make the eggs.
