Eggs with roasted sweet potatoes & greens

- Preheat the oven to 200°C, fan 180°C, gas mark 6.
- Cut the sweet potato into 8 wedges lengthwise and place on a nonstick baking tray. Spray with cooking spray and season with salt and pepper. Roast in the oven for 30 minutes or until golden brown and tender.
- Mist a large frying pan with cooking spray and fry the eggs for 3-4 minutes until the whites are crisp and the yolks still runny (or as desired).
- Serve the eggs with the wedges and a salad of mixed greens, tomato and cucumber drizzled with yogurt mixed with the herb sauce. Season to taste and serve immediately.
