Pancake Day is one of our favourite times of year. Whether you like yours thin and crispy or fat and fluffy like this Dutch baby, pancakes are the on-trend food to try, which means there’s more inspiration out there than ever!

Ingredients

Frozen Mixed Berries

250 g

Freshly squeezed orange juice

60 ml

Orange

1 zest(s) of 1

Vanilla pod

1 individual

Caster Sugar

½ tablespoon(s)

Butter

15 g

Plain White Flour

40 g

Organic wholemeal spelt flour

25 g, We used Doves Farm

Semi Skimmed Milk

150 ml

Egg, whole, raw

2 medium, raw

Vanilla Extract

1 teaspoon(s), level

Icing Sugar

1½ teaspoon(s), level

Instructions

  1. Preheat the oven to 220°C, fan 200°C, gas mark 7. Combine the berries, juice, zest, vanilla and caster sugar in a pan over a low heat. Simmer for 5 minutes then bring to a boil for 2 minutes. Remove from the heat and let cool.
  2. In the preheated oven, melt the butter in a 20cm heavy-based ovenproof skillet. Combine the flours in a bowl. In a jug, whisk together the milk, eggs and vanilla extract then whisk into the flour mixture.
  3. Remove the pan from the oven, swirl to coat in the butter, then add the batter. Bake for 25 minutes until risen and golden.
  4. Serve the pancake topped with the berries and dusted with icing sugar.
