Broccoli, raw

100 g, cut into small florets

3 rasher(s), roughly chopped

Spring Onions

2 medium, trimmed and sliced

Lighter Cheddar cheese (30% less fat)

75 g, grated

Egg, whole, raw

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4. Cook the broccoli in a pan of boiling water for 4 minutes. Drain well, then spread out on layers of kitchen paper to absorb any excess moisture.
  2. Meanwhile, mist a nonstick frying pan with cooking spray and put over a medium heat. Add the bacon and spring onions and cook for 4-5 minutes.
  3. Mist a 19cm shallow, round cake tin (not springform) with cooking spray and spread the broccoli and bacon mixture over the base. Scatter over the cheese and season with black pepper.
  4. Lightly beat the eggs, milk and soft cheese together until smooth. Pour into the tin and cook in the oven for 25 minutes, until the quiche is just set.
