Crustless bacon, broccoli & cheese quiche
100 g, cut into small florets
Calorie controlled cooking spray
Bacon medallions, raw
3 rasher(s), roughly chopped
2 medium, trimmed and sliced
WW Reduced Fat Mature Cheese (Block)
75 g, grated
Egg, whole, raw
2 medium, raw
Low Fat Soft Cheese
- Preheat the oven to 180°C, fan 160°C, gas mark 4. Cook the broccoli in a pan of boiling water for 4 minutes. Drain well, then spread out on layers of kitchen paper to absorb any excess moisture.
- Meanwhile, mist a nonstick frying pan with cooking spray and put over a medium heat. Add the bacon and spring onions and cook for 4-5 minutes.
- Mist a 19cm shallow, round cake tin (not springform) with cooking spray and spread the broccoli and bacon mixture over the base. Scatter over the cheese and season with black pepper.
- Lightly beat the eggs, milk and soft cheese together until smooth. Pour into the tin and cook in the oven for 25 minutes, until the quiche is just set.
