Instructions

  1. Preheat the oven to 180°C, 160°C fan, gas mark 5. Line a baking tray with foil and coat the foil with cooking spray.
  2. Place the cream cheese into a small bowl, stir in the chopped spring onions and tomatoes. Using a sharp paring knife, cut a horizontal slit through the thickest part of each chicken breast to form a pocket, cutting almost to but not through the other side. Divide the cheese mixture evenly among the chicken, stuffing into each pocket.
  3. On a plate, spread the poppy seeds, sesame seeds, onion granules, garlic powder and salt, and mix together. Lightly coat the top of each chicken breast with cooking spray, then dredge the top of each breast into the seed mixture, pressing to adhere.
  4. Arrange the chicken on the prepared tray, seasoning side up. Bake for 25-30 minutes until the chicken is cooked through.
