Cajun chicken pittas

1 medium, deseeded and sliced
½ small, finely chopped
- Mist the chicken breasts with cooking spray and sprinkle over the Cajun seasoning . Mist a nonstick frying pan with cooking spray and put over a medium heat. Add the chicken and cook for 10-12 minutes, turning occasionally, or until the chicken is cooked through. Allow to cool slightly, then use 2 forks to shred and set aside.
- Meanwhile, cut along one edge of each pitta to make a pocket. Lightly toast, then set aside and allow to cool slightly.
- Mix the mayonnaise with the lime juice and garlic.
- Spread the inside of the toasted pittas with the mayonnaise and fill with the shredded chicken, lettuce, pepper and a sprinkling of red onion, then serve.
