4 medium, cooked

Calorie controlled cooking spray

Red onion

1 small, thinly sliced

Red pepper

1 medium, deseeded and sliced

Garlic

2 clove(s), chopped

Tinned Tomatoes

1 can(s), large, chopped

Paprika

1 teaspoon(s), level, smoked

Vinegar, All Types

2 teaspoon(s), red wine

Agave Syrup

1 teaspoon(s), level

Butter Beans, cooked

2 can(s), large, drained, drained and rinsed

Parsley, fresh

1 tablespoon(s), chopped, to serve

Instructions

  1. Preheat the oven to 220°C, fan 200°C, gas mark 7. Prick the baking potatoes with a fork, then mist with cooking spray and rub with the salt. Bake directly on the oven shelf for 20 minutes. Reduce the temperature to 190°C, fan 170°C, gas mark 5 and bake for 1 hour or until the potatoes are tender and the skin is crisp and golden.
  2. While the potatoes are cooking, mist a pan with cooking spray and put over a medium heat. Add the onion and sliced red pepper, and cook for 6-8 minutes until soft. Add the garlic, chopped tomatoes, smoked paprika, red wine vinegar, honey and butter beans. Bring to a simmer and cook for 10-15 minutes or until the sauce has reduced. Make a cut in the baked potatoes and open them out slightly. Top each one with the beans and scatter over some chopped parsley, then serve.
