Vegetable stock cube

½ cube(s), make up to 250ml in hot water

Onion

½ medium, thinkly sliced

Garlic

½ clove(s), crushed

Passata

250 g

Dried Mixed Herbs

½ teaspoon(s)

Dried Basil

1 leaf/leaves

Hot Pepper Sauce (Tabasco)

½ splash(es)

Worcestershire Sauce

¼ teaspoon(s)

Tomato

1 large, finely chopped

Salt

1 pinch, season to taste

Black pepper

¼ pinch

Low Fat Natural Yogurt

1 tablespoon(s)

Basil, fresh

3 leaf/leaves

Notes

Pour stock into large saucepan. Add red onion and garlic. Bring up to the boil. Reduce heat and simmer, covered, until onion is tender, about 5 minutes.Add passata and dried herbs. Bring up to the boil. Turn down the heat and simmer for 5 minutes.Stir in torn basil leaves, Tabasco and Worcestershire sauce. Add chopped tomato, reserving some for garnish. Season soup, adding more Tabasco if you like.Serve the soup, topped with 1 tablespoon of yogurt, the reserved tomato and a few basil leaves.
