Peach, plum and Cheshire melt

1 medium, sliced
1 small, sliced
Wholemeal bread, sliced
40 g, sliced
Preheat the grill to medium-high.Heat a non stick frying pan and spray with the cooking spray. Add the peach and plum slices and cook over a high heat for 3–4 minutes, turning occasionally, until lightly browned and beginning to soften. Add the cinnamon or mixed spice and sugar and cook over a low heat for another 1–2 minutes.Meanwhile, toast the bread. Place on a heat-resistant plate or a baking sheet.Pile the spiced fruits on the toast and arrange the sliced cheese on top. Grill for 1–2 minutes, to melt the cheese a little. Serve at once.
