For the creamiest, smoothest guac you’ve ever had, give it a spin in your food processor. We add a little garlic, a touch of extra-virgin olive oil, lime juice, and salt—just enough to lend savory flavor without overpowering the fruitiness of the avocado. The toppings allow for a little textural bite when you dip in. In terms of dippers, think beyond just tortilla chips; crunchy vegetables such as carrots, cucumbers, and radishes are also fantastic. If you’d like to make this up to a day in advance, go ahead; the lime juice will keep it from browning.

Instructions

  1. In a food processor or mini food processor, place avocados, lime juice, oil, salt, and garlic; process until completely smooth, about 1 minute, stopping to scrape down the sides as needed. Spoon into a bowl; top with jalapeños, tomatoes, and scallions.
  2. Serving size: about 2 tbsp dip with 1/3 cup veggies and 2 chips

Notes

This dip is super rich and thick; a little bit goes a long way. Bulk it out, if desired, with chopped tomatoes, onion, and/or peppers.
