We add a little garlic, a touch of extra-virgin olive oil, lime juice, and salt—just enough to lend savory flavor without overpowering the fruitiness of the avocado. The toppings allow for a little textural bite when you dip in. In terms of dippers, think beyond just tortilla chips; crunchy vegetables such as carrots, cucumbers, and radishes are also fantastic. If you’d like to make this up to a day in advance, go ahead; the lime juice will keep it from browning.

In a food processor or mini food processor, place avocados, lime juice, oil, salt, and garlic; process until completely smooth, about 1 minute, stopping to scrape down the sides as needed. Spoon into a bowl; top with jalapeños, tomatoes, and scallions.
