This chocolate pie is super luxurious, super satisfying, and super easy to make. You only need 6 ingredients, a majority of which you may already have. Buttered chocolate cookie crumbs serve as the crust, while the filling consists of heavy cream, powdered sugar, and vanilla extract. Decorate the pie with curled or grated chocolate, and let it hang in the fridge for up to 1 day. Feel free to serve it with fresh berries alongside for a really nice touch and beautiful presentation. You can also change the flavor of this recipe by topping the pie with fresh mint leaves, fresh raspberries, or whole ripe strawberries.

Ingredients

Chocolate wafer

4½ oz, processed to crumbs

Unsalted butter

4 Tbsp, melted

Heavy whipping cream

¾ cup(s), yields 2 cups whipped

Powdered sugar (confectioner's)

2 Tbsp

Vanilla extract

1 tsp

Bittersweet chocolate

3 oz, curled or grated with a vegetable peeler

Instructions

  1. In a small bowl, combine cookie crumbs with melted butter until fully-incorporated; press into bottom of a 10-inch spring form pan and place in refrigerator.
  2. In a mixing bowl, using an electric mixer on high, beat cream, sugar and vanilla extract until stiff peaks form; gently fold in half of chocolate. Spoon whipped filling over prepared crust and decorate with remaining chocolate; cover and refrigerate for at least 2 hours and up to 24 hours. When ready to serve, run a knife around edge of pan and release outer ring of spring form pan. Cut into 12 pieces and serve. Yields 1 piece per serving.
