Turkey sausage with polenta and greens

This robust meal-in-a-bowl is the perfect warming solution for a chilly winter day. Instead of mustard greens, you can substitute whatever chopped greens are available in the freezer case, such as kale or spinach. Not counting the water and salt, this is a four-ingredient dinner, which makes it a prime candidate for being on your regular rotation. Another reason to love it is that it comes together quickly. Five minutes of prep time and fifteen minutes at the stove. The results are hearty and full of flavor. And even though the recipe calls for spicy turkey sausage, feel free to swap in milder, sweet Italian turkey sausage, if you prefer.
Ingredients
Frozen chopped mustard greens
10 oz
Uncooked turkey sausage
7 oz, 2 (3 1⁄2-ounce), hot variety, casings removed
Hot water
3 cup(s)
Uncooked polenta
⅔ cup(s), Instant variety
Sea salt
½ tsp
Grated Parmesan cheese
2 Tbsp

Thaw the mustard greens in the microwave according to package directions.

Meanwhile, spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the sausages and cook, breaking them up with a wooden spoon, until browned and cooked through, about 4 minutes. Add the mustard greens and cook, stirring frequently, until thoroughly heated through, about 2 minutes.

Meanwhile, bring the water to a boil in a medium saucepan. Whisking constantly, gradually add the polenta in a slow, steady stream; reduce the heat and cook, stirring constantly, until thick, but not stiff, 3–4 minutes. Whisk in the salt.

Divide the polenta among 4 serving bowls; top with sausage and greens, then sprinkle evenly with the Parmesan cheese. Yields 2⁄3 cup polenta, 1⁄2 cup sausage and greens, and 1⁄2 tablespoon cheese per serving.
