Sweet pineapple and strawberry salsa with yogurt

Sometimes, the best salsas don't involve tomatoes, and this recipe for sweet pineapple and strawberry salsa with yogurt is the prime example. Here, we've added coconut flakes to a sweet medley of fresh fruit, making it a nontraditional but entirely delicious topping. But, don't stop there. Add some non-fat Greek yogurt to not only balance out the sugar but also elevate this dish to an ideal breakfast or full-fledged dessert for one. To kick it up a notch, you can throw in some minced jalapeño peppers to the salsa, too. This transitions the dish into more of a savory delight, which is equally as good of an idea!
½ cup(s), Golden variety, diced
3 medium, diced
Fresh mint leaves
1 tsp, chopped
⅛ tsp, grated
Plain fat free Greek yogurt
Unsweetened coconut flakes
1 Tbsp, toasted
- Combine pineapple, strawberries, mint and lime zest in a small bowl. Either top with yogurt and sprinkle with coconut, or spoon yogurt into a serving glass and top with fruit and coconut.
