This strawberry mousse is the stuff that dreams are made of: light and fluffy pillows of sweet strawberry goodness. This mousse is even better when strawberries are in season and at their sweetest. Choose berries that are shiny and bright red all the way through, avoiding any with soft spots, mold, or white shoulders.

2 cup(s), ripe, hulled and roughly chopped (about 8 oz)

Fresh lemon juice

1 tsp

Egg whites

1 large, pasteurized, at room temperature

Instructions

  1. In a small bowl, combine strawberries with lemon juice. Set aside.
  2. Place egg white in the bowl of a stand mixer fitted with a whisk attachment. Whisk on medium-low until foamy and smooth, about 1 minute. Slowly add sugar, increasing speed to medium-high, until completely incorporated, at least 30 seconds. Add strawberries, gradually increase speed to high, and continue whipping until stiff peaks form and mousse fills half the bowl, 7 to 10 minutes. (Make sure not to whip the mousse too much. The mousse should be smooth and silky; not dry, grainy, or clumpy. If your mixture starts to splatter, drape a clean kitchen towel over your mixer as you work.)
  3. Spoon 1 cup mousse into each of 6 serving dishes and freeze for 20 minutes or until ready to serve. (The longer the mousse is frozen, the more ice cream-like the texture will be.)
  4. Serving size: 1 cup

Notes

Be careful when separating your egg. If you get any yolk in with your white, it won’t whip properly.
