Everyone loves a seven layer dip! This colorful snack can be made in just 10 minutes and feeds a crowd. The hearty bean base topped with layers or Mexican flavors is wonderful with tortilla chips or cut fresh vegetables for dipping. Serve this crowd-pleaser for a game-day win or fun party starter. We used traditional layers but you can try experimenting with other vegetables in the layers if you wish. Make your dip spicier or less spicy based on the group you are serving.

Ingredients

Canned pinto beans

16 oz, rinsed and drained

Hot pepper sauce

tsp, several drops or to taste

Tomato

1 medium, chopped

Green bell pepper

½ medium, bell, seeded and chopped

Salsa

1 cup(s)

Fat free sour cream

1 cup(s)

Light cheddar cheese

¾ cup(s), shredded

Scallions

4 medium, thinly sliced

Olives

10 gm, black, pitted, sliced

Instructions

  1. In a blender or food processor, puree the beans, pepper sauce and 2 tablespoons water. Transfer to a 12-inch serving platter; spread in a thin layer on the platter.
  2. Leaving a 1-inch border, top the bean mixture evenly with the tomato, bell pepper and salsa. Leaving a 1-inch border, top the tomato layer evenly with the sour cream and cheese. Sprinkle with the scallions and olives.
