These mini, open-faced reuben sandwiches are piled high with corned beef, Swiss cheese, and sauerkraut. They're great party appetizers, brunch starters, or snacks.


Ingredients
Cooking spray
2 spray(s), or enough to coat bread
Reduced-calorie rye bread
6 slice(s)
Light thousand island salad dressing (10 calories per tsp)
¼ cup(s)
Low fat Swiss cheese
8 oz, cut into 6 equal pieces
Cooked corned beef brisket
¼ pound(s), cut into 6 equal pieces
Sauerkraut
1 cup(s), drained
Instructions

Preheat oven to 350ºF. Coat a baking sheet with cooking spray. Place rye bread on baking sheet; coat with cooking spray.

Spread 2 teaspoons salad dressing on each piece of bread; top with 1 piece cheese, 1 piece beef and 2 2/3 tablespoons sauerkraut.

Bake for 15 minutes, slice each reuben into 4 equal pieces and serve.
