Raspberry-lemon parfaits

These parfaits take only minutes to make, but are elegant and festive enough to serve to company. They also only require seven ingredients, two of which are different flavors of sorbet. We love the flavor combination of the lemon and raspberries, but feel free to use your favorite berry or whatever you may have on hand. You can also leave them in the freezer until it's dessert time, making these parfaits one of our favorite party-ready recipes. Be sure to look for the lemon curd in the jelly aisle of your supermarket. If you can't find it, prepared vanilla pudding or pie mix will work as well.


Ingredients
Sorbet
½ cup(s), lemon, split into 2 scoops
Lemon curd
2 Tbsp
Sweetened frozen red raspberries
¼ cup(s), thawed
Sorbet
½ cup(s), raspberry, split into 2 scoops
Light aerosol whipped cream
2 Tbsp
Raspberries
¼ cup(s)
Peppermint leaves
1 Tbsp, or 2 mint sprigs
Instructions

Place 1 scoop of lemon sorbet in each of 2 dessert or wine glasses. Top each with 1 tablespoon of lemon curd, 2 tablespoons of frozen raspberries and 1 scoop of raspberry sorbet; freeze until ready to serve.

Just before serving, top each parfait with 1 tablespoon of whipped topping, 2 tablespoons of fresh raspberries and mint.
