These parfaits take only minutes to make, but are elegant and festive enough to serve to company.
sorbet½ cup(s), lemon, split into 2 scoops
lemon curd2 Tbsp
sweetened frozen red raspberries¼ cup(s)
sorbet½ cup(s), raspberry, split into 2 scoops
lite whipped topping2 Tbsp
mint leaves1 Tbsp, or 2 mint sprigs
- Place 1 scoop of lemon sorbet in each of 2 dessert or wine glasses. Top each with 1 tablespoon of lemon curd, 2 tablespoons of frozen raspberries and 1 scoop of raspberry sorbet; freeze until ready to serve.
- Just before serving, top each parfait with 1 tablespoon of whipped topping, 2 tablespoons of fresh raspberries and mint.
