A delicious rice pudding is a great way to use up leftover rice. This pudding can be eaten warm or chilled and can be spiced up with ground cinnamon.

Ingredients

fat free skim milk

1 cup(s)

cooked white rice

1 cup(s), long-grain

raisins

¼ cup(s), dark

sugar

1 Tbsp

orange zest

1 tsp, grated

vanilla extract

¼ tsp

Instructions

  1. Bring the milk, rice, raisins, and sugar to a boil in a medium saucepan. Reduce the heat and simmer, uncovered, stirring often, until the pudding is thick and creamy, about 15 minutes.
  2. Remove the pudding from the heat and stir in the orange zest and vanilla. Let stand at room temperature to cool slightly, then serve warm or cover and refrigerate until chilled, about 2 hours. Yields generous 1/2 cup per serving.
