A delicious rice pudding is a great way to use up leftover rice. This pudding, flavored with raisins, orange zest, and vanilla extract, can be eaten warm or chilled and can be spiced up with ground cinnamon. Cooked white rice
¾ cup(s), long-grain
Raisins
¼ cup(s), dark
Sugar
2½ tsp
Orange zest
1 tsp, grated
Vanilla extract

Instructions

In medium saucepan, bring milk, rice, raisins, and sugar to boil. Reduce heat and simmer, uncovered, stirring often, until pudding is thick and creamy, about 15 minutes.

Remove pudding from heat and stir in orange zest and vanilla. Let stand at room temperature to cool slightly. Spoon into small bowls and serve warm, or cover and refrigerate until chilled, about 2 hours.
