A delicious rice pudding is a great way to use up leftover rice. This pudding, flavored with raisins, orange zest, and vanilla extract, can be eaten warm or chilled and can be spiced up with ground cinnamon. For a flavorful warm-weather variation, you make rice pudding parfaits by spooning alternating layers of rice pudding and cut-up fruit or berries into parfait glasses or goblets.

Fat free skim milk

Cooked white rice

¾ cup(s), long-grain

Raisins

¼ cup(s), dark

Sugar

2½ tsp

Orange zest

1 tsp, grated

Vanilla extract

¼ tsp

Instructions

  1. In medium saucepan, bring milk, rice, raisins, and sugar to boil. Reduce heat and simmer, uncovered, stirring often, until pudding is thick and creamy, about 15 minutes.
  2. Remove pudding from heat and stir in orange zest and vanilla. Let stand at room temperature to cool slightly. Spoon into small bowls and serve warm, or cover and refrigerate until chilled, about 2 hours.
