Here’s an easy and nutrient-packed recipe to break up your usual breakfast routine—and it’s ready in less than 10 minutes. Muesli is a European breakfast cereal usually made from a mixture of uncooked old-fashioned oats, grains, nuts, seeds, dried fruits, and spices. It can be made ahead, stored in an airtight container, and used throughout the week. It’s often served with milk, as we have here, or yogurt, and depending on how much crunch you prefer determines how long to let the mixture sit. The longer it sits, the softer it will become. You can top the muesli with whatever fresh fruit you like, such as berries, bananas, and peaches.

Ingredients

Uncooked old fashioned rolled oats

2 cup(s), (rolled)

Dried apricot halves

¼ cup(s), diced

Toasted wheat germ

¼ cup(s)

Instant nonfat dry milk

¼ cup(s)

Sliced almonds

Ground cinnamon

½ tsp

Fat free skim milk

7½ cup(s), (for serving)

Unsweetened fresh fruit

Instructions

  1. Stir together oats, apricots, wheat germ, dry milk, almonds, and cinnamon in large bowl. Store in airtight container up to 2 weeks.
  2. To serve, stir together generous ¼ cup oat mixture and ¾ cup fat-free milk in small bowl. Let stand 2–30 minutes or cover and refrigerate overnight, depending on desired texture (the longer it stands, the softer it becomes). Top muesli with fresh fruit just before eating.
  3. Per serving (generous ¼ cup muesli, ¾ cup fat-free milk, and ½ cup fresh fruit)
