Lupin "oat"meal with fruit and almonds by Carrington Farms

- Set a small saucepan over medium heat; add ground lupin. Cook, stirring a few times, until lupin is toasted, about 1 minute.
- Stir almond milk, maple syrup, and salt into lupin; bring to a boil over high heat. Reduce heat to low; cover and simmer until lupin is tender and liquid is absorbed, about 5 minutes. Remove from heat; let sit for 5 minutes (drain any excess liquid, if necessary).
- Fluff lupin with a fork; serve topped with fruit and almonds.
- Serving size: about 1/2 cup lupin, 1/2 cup fruit, and 1 tbsp almonds
