Start your day with this warm, filling alternative to oatmeal. Vary the toppings to make DIY hot breakfast bowls. Chopped walnuts with banana and blueberry, or chopped pistachios with pineapple and mango, are also delicious combinations.

Ingredients

Carrington Farms Plain ground lupin bean, dry

Plain unsweetened almond milk

16 fl oz

Maple syrup

1 Tbsp

Table salt

Sliced almonds

Fresh fruit salad

Instructions

  1. Set a small saucepan over medium heat; add ground lupin. Cook, stirring a few times, until lupin is toasted, about 1 minute.
  2. Stir almond milk, maple syrup, and salt into lupin; bring to a boil over high heat. Reduce heat to low; cover and simmer until lupin is tender and liquid is absorbed, about 5 minutes. Remove from heat; let sit for 5 minutes (drain any excess liquid, if necessary).
  3. Fluff lupin with a fork; serve topped with fruit and almonds.
  4. Serving size: about 1/2 cup lupin, 1/2 cup fruit, and 1 tbsp almonds
