This fun twist on classic guacamole comes together in just 10 minutes, uses a frozen veggie to bulk it out, and barely requires more than a whirl in your blender. Katie Lee likes her guac creamy but you can leave yours chunkier if you prefer. This recipe is easy to customize. Stir in some chopped red onions, spicy peppers, or tomatoes for a pop of color, flavor, and texture. Serve with chips and fresh veggie sticks, or set out a platter of halved sweet baby peppers filled with the guacamole.
Ingredients
Frozen baby peas
½ pound(s)
Avocado
1 medium, pitted and peeled
Fresh lime juice
1 Tbsp
Garlic clove
2 clove(s), minced
Cilantro
2 Tbsp, minced
Table salt
2 pinch(es), or to taste
Black pepper
2 pinch(es), or to taste
Instructions

Blanch peas; cool under cold running water or in an ice bath. Place cooled peas in a food processor or blender; add avocado, lime juice, and garlic. Puree until desired texture; transfer to a bowl. Stir in cilantro; season with salt and pepper.
