Lemony Fava Bean Dip

This dip is a tasty spin-off of hummus and is the perfect creamy spread to include on your next Mediterranean-inspired snack board. Pair it with sliced apples, grapes, small cubes of fresh feta, assorted crudite, and cashews. Using canned fava beans (sometimes called broad beans) saves time but look out for fresh fava beans in the spring. They take a little extra time to prep but are definitely worth the effort.


Ingredients
Canned fava beans

Tahini
¼ cup(s)
Garlic clove
2 clove(s)
Lemon zest
1 Tbsp
Fresh lemon juice
5 Tbsp
Ground cumin
½ tsp
Kosher salt
½ tsp
Black pepper
½ tsp
Extra virgin olive oil
3 Tbsp
Fresh parsley
1 Tbsp
Instructions

In a food processor, place beans, tahini, garlic, lemon juice, cumin, salt, and pepper; process to combine. With the machine running, drizzle in oil; process until smooth, stopping to scrape down the sides as needed.

Spoon into a bowl; garnish with lemon zest and parsley. Serve immediately.
