Like their creamy namesake pie, these pops are tart and refreshing. They are so simple to make: Simply stir the ingredients together, pour the mixture into popsicle molds, and let them freeze until they are solid. Look for bottled Key lime juice in larger supermarkets to make the prep for this super quick or, if you can find them, you can squeeze your own. You will need about 8 small Key limes to yield enough juice. The buttermilk makes these popsicles extra creamy and adds a little zing of flavor too. Also, don’t be tempted to skip the sugar here. It’s needed not only to balance the tart limes but also to give these pops a soft enough texture to bite into.

1% low fat buttermilk

1½ cup(s)

Fresh lime juice

¼ cup(s), from Key limes

Sugar

¼ cup(s)

Instructions

  1. Whisk all ingredients in a large bowl until sugar dissolves.
  2. Divide mixture among six 1/3-c popsicle molds; freeze until solid (about 3 hours).
  3. Serving size: 1 pop
