This festive drink gives the classic margaritas a makeover with the addition of homemade orange-infused simple syrup and pomegranate juice, adding fabulous color and flavor to celebrate the season. The alcohol got a bit of a makeunder though—we've drastically reduced the amount by replacing some of the liqueur with orange-flavored syrup. This drink mimics a frozen margarita as it’s blended with ice until pourable, but you can also make an on-the-rocks version by skipping the blender, mixing the ingredients together, and serving over the ice instead. This recipe makes 12 margaritas but you can easily double it if need be to serve a larger crowd.

Orange zest

1½ Tbsp, from one orange

Ice cube

Pomegranate juice

Fresh lime juice

Canned mandarin oranges in light syrup

¾ cup(s)

Orange-flavored liqueur

5 Tbsp

Silver tequila

3 Tbsp, or regular tequila

Kosher salt

tsp, or to taste, optional

Lime

1 medium, cut into 12 wedges for garnish

Instructions

  1. To prepare the orange syrup, combine the water, sugar, and zest in a small saucepan; cook, stirring occasionally, over medium heat until the sugar dissolves. Increase the heat and bring to a boil. Boil 1 minute (do not stir). Remove the pan from the heat; cool completely.
  2. Transfer to a small jar and refrigerate until ready to use; strain and discard the zest just before using.
  3. To prepare 2 margaritas, fill a blender with about 1 3⁄4 cups ice. Add 1⁄4 cup of the pomegranate juice and 2 tablespoons each of the orange syrup, lime juice, and mandarin oranges. Add 2 1/2 teaspoons orange-flavored liqueur and 1/2 tablespoon tequila; pulse several times until smooth and pourable.
  4. Divide into 2 chilled martini or other cocktail glasses, with salted rims (if using), and garnish each with a lime wedge.
  5. Repeat with the remaining ingredients to make 12 margaritas.
