If all you’ve ever eaten are store-bought flour tortillas, the flavor of these will be a revelation. How such simple ingredients transform into a puffy, crisp-edged flatbread is kitchen magic.

All-purpose flour

Instructions

  1. Combine flour, oil, baking powder, and salt in large bowl; stir in water until soft dough forms. Divide dough into 12 equal pieces and shape each into ball. Roll each ball out between sheets of plastic wrap into a 6-inch round.
  2. Set medium skillet over medium heat and heat until drop of water sizzles in it. Reduce heat to medium-low. Add 1 piece of dough and cook until speckled and slightly puffed, about 1 1/2 minutes on each side. Transfer tortilla to plate lined with clean kitchen towel; fold towel over to keep tortilla warm. Cook remaining dough to make total of 12 tortillas, stacking them under the towel as they are cooked.
