Ginger-Broiled Salmon with Cucumber-Mint Relish

This elegant yet easy salmon dish — perfect for family or friends — tastes great with a bowl of steamed scrubbed red baby potatoes. A ginger rub brings out the delicious flavor of the salmon. The broiler makes a quick and easy cooking method for weeknight suppers. The simple relish of cucumber, mint, rice wine vinegar and ginger can be made ahead and makes a flavorful topping for the salmon.


Ingredients
English cucumber
1 medium, halved, seeded, and thinly sliced
Peppermint leaves
¼ cup(s), thinly sliced
Seasoned rice vinegar
¼ cup(s)
Fresh ginger
2½ tsp, fresh, peeled and minced
Canola oil
2 tsp
Sugar
¼ tsp
Table salt
⅛ tsp, or to taste
Black pepper
⅛ tsp, or to taste
Uncooked farmed Atlantic salmon
24 oz, 4 (6-oz) fillets, about 1-in thick each

To make the relish, stir together the cucumber, mint, vinegar, and 1/2 teaspoon of the ginger in a medium bowl.

Preheat the broiler. Spray the broiler rack with nonstick spray.

Stir together the remaining 2 teaspoons ginger, the oil, sugar, salt, and pepper in a cup. Rub the ginger mixture on both sides of the salmon steaks. Place the salmon on the broiler rack and broil 4 inches from the heat until the fish is just opaque throughout, about 5 minutes on each side. Serve with the cucumber relish.

Yields 1 salmon steak and 1/2 cup relish per serving.
