Here's a freezer-friendly snack that's a delicious cross between ice cream and a frozen yogurt bar. Customize the toppings with other combinations of Fiber One Bars, fresh or freeze-dried fruit, and nuts.

Plain fat free Greek yogurt

2 cup(s)

Agave nectar

2 Tbsp

Lemon zest

1 tsp

Fresh lemon juice

1 tsp

Freeze-dried strawberries

¾ cup(s)

Fiber One 70 Calorie Chocolate Fudge Brownie

2 brownie(s), crushed with your hands into small pieces

Shelled pistachio nuts

¼ cup(s), chopped

  1. Line a 9-by-13-inch pan with aluminum foil so the foil hangs over the edges of the pan.
  2. In a small bowl, combine the yogurt, agave, and lemon zest and juice. Using the back of a spoon, spread the yogurt mixture into an even layer in the prepared pan; scatter the strawberries, brownies, and nuts over top. Cover the pan with foil; freeze for at least 1 hour.
  3. When ready to serve, remove the tray from the freezer, uncover the pan, and lift the bark from the pan holding the edges of the foil. Cut the bark into 16 even pieces (if the bark is too hard to cut, let it sit for a few minutes until it softens slightly). Keep the bark stored in the freezer in a sealed container until ready to serve.
  4. Serving size: 1 piece
