Sandwich cookies seem like a complete cheat. You get two cookies and a creamy filling in a single package. This is the ultimate peanut butter cookie filled with rich peanut butter cream, and to gild the lily, it gets topped with even more peanut butter cream. Peanut powder is a protein-dense ingredient made from defatted ground peanuts from which a portion of the fat has been removed. It has many culinary uses. It is used in baking, as a thickener for soups, and in coatings for meats. Because it is defatted, it can be reconstituted with water to create peanut butter with three-quarters less fat than traditional peanut butter.

Ingredients

Peanut Butter & Co. Vanilla flavored peanut powder

Ground cinnamon

Skim milk

2 Tbsp, or any kind

Plain fat free Greek yogurt

Sugar and sweetener for baking

White rice flour

Instructions

  1. Preheat oven to 325°F. Mix oat flour, millet or peanut flour, 1 tbsp sugar , and salt in a bowl.
  2. In a separate bowl, add peanut butter, cinnamon, salt, and milk. Heat in the microwave for about 15 seconds to soften peanut butter. Mix with a fork until smooth.
  3. Add wet ingredients to dry. Mix together until a thick cookie dough forms. You can use your hands if necessary. Roll dough into a ball. Place dough between two sheets of wax paper. Roll out until about 1/2 inch thick.
  4. Use cookie cutter to cut out round cookies about 1 1/1 inches in diameter. Keep rolling dough and cutting cookies until it runs out. It should make about 14 cookies.
  5. Place cookies on a baking sheet prepared with nonstick spray. Bake for about 8 minutes. Let completely cool.
  6. Mix remaining Mighty Nut powder. Greek Yogurt, and remaining milk. It should make a thick filling. Place about 1 1/2 tbsp. of filling into the middle 7 of the cookies. Gently press another cookie on top of each.
  7. Put remaining peanut butter filling in a small plastic bag. Cut a small hole on the end and pipe filling in a criss-cross on top of each sandwich cookie. Enjoy!
