Instant pudding mix is the shortcut ingredient that makes this pie super simple to make. Freeze-dried berries give the filling concentrated fruit flavor, and their dry texture keeps the filling firm (fresh or frozen fruit tends to be too watery). Fresh strawberries make a pretty crowing touch that offers juicy bursts of flavor.

Freeze-dried strawberries

Fat-free sugar-free instant vanilla pudding mix
1½ oz, one family-size box
Plain unsweetened almond milk (vitamin and mineral fortified)

Plain fat free Greek yogurt

Reduced-fat graham cracker pie crust

Strawberries
2 cup(s), sliced

Seal the freeze-dried berries inside a large zip-top plastic bag, pressing out all the air. Roll a rolling pin back and forth over the bag to finely crush the berries. They don’t have to be completely pulverized; some small chunks are fine.

In a large bowl, whisk together the pudding mix and almond mix until the mixture is smooth and thickened, 1 to 1 ½ minutes. Whisk in the yogurt until well combined, then whisk in the crushed freeze-dried berries. Spread the mixture into the pie crust. Top with the sliced strawberries. Cover and chill until fully set, about 2 hours. Slice into 10 pieces.
