The watermelon serves a great base for these berry pops. Make them with the freshest berries you can find. Consider adding a pinch of salt to the blender with the fruit. Like the lime juice, it will really enhance the flavors of the fruit. Make a double or triple batch of these to keep in your freezer. They are a summertime treat adults and kids alike can't resist. Tinker with the recipe if you wish. Try cantaloupe and blueberries, honeydew and raspberries, or Crenshaw melon and strawberries. If you like things spicy and frosty, toss a few fresh jalapeño slices into the blender too for popsicles with added punch.

Watermelon

2½ cup(s), seeded and diced

Blackberries

½ cup(s)

Sugar

2 Tbsp

Fresh lime juice

1 Tbsp

Instructions

  1. Purée ingredients in a blender until smooth. Strain into a 2-cup measuring cup, pressing on remaining solids to extract all the liquid. Pour into 8 Popsicle molds. Freeze until hard, at least 5 hours or overnight.
