Berries with creamy lemon sauce

Add tangy, sweet flavor to your berries with this delicious, low-calorie dessert sauce. It is also delicious drizzled over warmed angel food cake. To make this dairy-free, substitute your preferred nut, seed, or grain milk in place of the cow's milk. Change the flavor profile by changing the extract. Vanilla, almond, orange, or maple extracts would be good bets. Use whatever berries are fresh and in season. Raspberries, blackberries, and even stonefruit like cherries, peaches, or plums would be delicious with this sauce.

Fat free skim milk

Sugar
¼ cup(s)
All-purpose flour
1 Tbsp
Lemon extract
¾ tsp
Strawberries
2 cup(s), hulled and halved
Blueberries

Instructions

Combine milk, sugar and flour in the top of a double boiler (or in a bowl) over simmering water, stirring frequently, until mixture thickens, about 30 minutes. Remove from heat and stir in lemon extract. Cover and refrigerate until cool.

Place about 1/2 cup of strawberries and 1/4 cup of blueberries into each of 4 stemmed glasses. Spoon about 1/3 cup of lemon sauce into each cup.
